Bayou® White Rum
Our purest expression of Bayou Rum imparts a fresh, vibrant taste and aroma for a multi-layered flavor experience.
Rests for up to 40 days to allow the crisp, clean flavors to mellow and combine. The pot still rum adds a delicate complexity rare in white rums. Bayou Rum is proofed with triple-filtered fresh local water, delivering the cleanest and purest taste.
Nose
Light notes of vanilla, banana, and green apple.
Palate
Creamy sweet notes, vanilla bean, and a slight hint of honeysuckle nectar with light complexity from the pot still.
Finish
A little creamy, leaving a sweet taste of pot still rum flavor.
Serves
Bayou White is perfect over ice, in a classic Daiquiri or Mojito, or in your favorite rum cocktail creation – enjoy in Bloody Mary, Moscow Mule, Mojitos.

Bayou® Spiced Rum
A cajun spiced rum for a bigger flavor.
Infused with a complex, delicate blend of spices inspired by Louisianan Creole baking, including 3 styles of natural vanilla, cinnamon, and sweet figs. Bayou Rum rests for up to 30 days with the Creole spices to impart a big flavor and amber color, which it retains both in a cocktail and when enjoyed neat. This multiple gold winner is also exceptional for baking.
Nose
Sweet aroma of cinnamon and sweet banana.
Palate
Mild yet complex blend of maple, banana, allspice, clove, vanilla, and pepper.
Finish
Full mouth complexity with lingering notes of Creole baking spices.

Bayou® Reserve Rum
The rum for bourbon drinkers.
Matured in wet ex-bourbon barrels for up to 4 years for extra bourbon notes. Special aging uses the Solera method for a consistent flavor, smoothness, and character. Handcrafted, pot-distilled, and naturally gluten-free.
Nose
Creamy vanilla with hints of apple and cinnamon.
Palate
Opens with a dry oak-like character reminiscent of an aged bourbon, followed by pronounced cinnamon and maple.
Finish
Dry with long-lasting notes of dark fruit and wood.
Serves
Neat or on the rocks or whiskey-style cocktails like an Old Fashioned, Manhattan, Rum Sour, or a Daiquiri.

The Solera Aging Method
As we built our Solera aging system, our barrels were tipped on their sides, filled with Bayou Rum, and then vertically stacked into a pyramid. The oldest rum barrels ended up right “on the ground” which is the meaning of “solera” in Spanish. When we harvest for a batch, the bottom barrel is tapped for part of its content to be bottled. Then that bottom barrel is topped off from the next oldest barrel above it, which is filled from the next oldest, and so on until we refill the top barrel with new rum to mingle with older aged rum. For the next aging interval it happens all over again. The benefit is a natural blending process for consistent taste and quality which gets better each time we harvest a batch. The result is delicious Bayou Reserve Rum.

Limited edition rum matured in California red wine barrels for 5 years, resulting in a rich, fruity, and full-bodied spirit.

Robust, round, and long finished with notes of berries and toasted oak.

Bayou® XO Mardi Gras
The festive spirit of Louisiana.
An Ultra Premium rum matured in bourbon barrels for up to 5 years and finished for 1 extra year in the finest Spanish Pedro Ximenez sherry barrels, leaving a deep mahogany complexion. A double cask luxury rum.
Nose
Slightly floral mixed with cedar wood, stone fruit, plum, sandalwood, and dried dark fruit.
Palate
Multi-layered and complex with hints of orange marmalade and dark stone fruit, with bursts of blackcurrant, prune, and oak, along with slight sweetness reminiscent of tupelo.
Finish
Long and pleasantly dry with honey, black pepper, and sherry.
Serves
Neat, rocks, or in a sophisticated bourbon cocktail like an Old Fashioned.
